Thanks to the abundance of wild blueberries here in Alaska, I have an equally abundant collection of recipes for them. This blueberry tart recipe is especially delicious and simple to make. It’s a tasty treat that our family loves and I think you will too!

If you know anything about Alaska, I’m sure you have heard about its famous wild blueberries. They’re scattered all over and picking them is a highlight of the year for many residents and visitors.

You often have to travel quite a ways into the woods to find a good spot. We go two hours by four-wheeler to get to ours. We pack a picnic lunch, bring lots of water and buckets, of course. It’s a fun challenge to see who picks the most, if they’re not all eaten first!

When we get back home, we set some of the berries aside for immediate use, including making our favorite homemade jam. The rest are frozen for use throughout the rest of the year until the next berry season. This is our favorite blueberry tart recipe and you can use either frozen or fresh blueberries. It’s fairly simple to whip up and an absolutely delicious dessert!

Ingredients for Blueberry Tart Recipe

You most likely have all of these basic ingredients on hand already! A homemade tart is so simple and makes the perfect dessert with just a few additions to some blueberries.

  • Pie Crust- Use your favorite pie crust recipe for the base of this tart. Remember to make your crust ahead of time as it will need time to chill in the fridge. Store-bought crusts will work as well. There is no need to pre-bake the crust for this recipe.
  • Blueberries- I use wild blueberries the we hand-pick here in Alaska. You can use fresh berries or frozen blueberries for this recipe. If using frozen, pull them out and bring them to room temperature while you’re getting the pie crust and other ingredients ready.
  • Honey- I try to use raw honey from our bees in my baking recipes but organic granulated sugar will work as well. You will need granulated sugar for the crumble topping however.
  • Cornstarch
  • Flour- You can use all purpose flour or freshly milled whole wheat flour for the crumble.
  • Melted Butter- I use unsalted butter. Here’s a recipe for homemade butter that is so easy to make if you would like to give it a try!

An optional ingredient is to add a little orange or lemon zest to the crumble topping when you’re mixing it up for some extra flavor!

Tools You Will Need

You don’t need any fancy equipment to make this basic, beautiful tart. I use a glass tart pan, mainly because I’ve just never bought a standard tart pan with a removable bottom. So my tart stays in the dish when I serve it. 

You might like using a tart pan with a removable bottom so that you can display it on a pretty platter. Also, if you don’t have a tart pan at all, feel free to use a regular pie dish instead. The choice is yours but it will be a beautiful dessert, and delicious, no matter what!

How to Make Blueberry Tart Recipe

This is really an easy recipe to make and the best part is that it only has one main simple ingredient, blueberries! You can always use a can of blueberry pie filling from the grocery store but I promise these steps won’t take that much extra time at all!

  • Start by making a pie crust using your favorite recipe. Wrap and chill in the fridge for a bit while you get the other ingredients ready.
  • Remove the pie crust from the fridge and roll out into about a 12 inch round, depending on the size of your tart pan. Gently press dough into the pan and trim off the excess dough along the edge of the pan.
  • In a small mixing bowl, combine the blueberries, sugar of your choice, and cornstarch. Stir well.
  • Carefully pour the blueberry mixture into the tart dough. 
  • In another small bowl, make the crumble. Combine flour, granulated sugar, and orange or lemon zest, if using. Pour the melted butter into the bowl and use a fork or your fingers to mix it all together until crumbly.
  • Use your fingers to sprinkle the crumble topping evenly all over the tart filling.
  • Bake in a 425 degree F oven for about 40 minutes, or until the crust is golden brown and the center of the blueberry filling is bubbling.
  • Remove from the oven and place on a cooling rack for a little while before serving.

Tips & Tricks

  • Serve this tart on its own or along with some vanilla ice cream! Here’s a recipe to make it at home.
  • Store leftovers in an airtight container, covered with a beeswax wrap or with plastic wrap in the fridge for up to three days. Reheat, if desired, in a 350 degree oven for about 10 minutes or until nice and warm. Or microwave for about 30 seconds. It really is yummy even when you reheat it! Or enjoy it cold from the fridge.
  • Make mini tarts! Use small tart pans to make individual tarts for your family members or special guests. Depending on the size of your small tart pans, you should be able to make four to six with this recipe. Or even more if they’re miniature tarts!
  • This blueberry tart is perfect for special occasions or a dinner party. Pre-cut the buttery tart crust to make it easier for guests to scoop up a piece.

  • 2/3 cup Honey or granulated sugar
  • 2 tbsp Cornstarch
  • 3/4 cup Flour
  • 1/2 cup Granulated sugar
  • 1/3 cup Butter, melted
  • 1 Pie crust

Instructions

  • Prepare a pie crust using your favorite recipe then chill it in the fridge while you get the other ingredients ready.
  • Preheat oven to 425 degrees F.
  • In a small mixing bowl, combine the blueberries, honey, and cornstarch. Mix well.
  • In another small bowl, combine the flour and granulated sugar. Pour in the melted butter and mix well using a fork or your fingers until crumbly.
  • Remove the pie crust from the fridge and roll into about a 12-inch circle, or the correct size to fit your tart pan. Press the dough gently in the pan. Trim off any excess dough so it's even with the top of the pan.
  • Pour the blueberry mixture in the prepared pan and spread out evenly.
  • Sprinkle the crumble mixture evenly on top of the blueberry filling.
  • Bake for about 40 minutes, or until the crust is golden brown and the center of the blueberry filling is bubbling.
  • Cool on a wire rack before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days.
Heat leftovers in a 350 degree F oven for about 10 minutes or until warm. Or reheat in a microwave for about 30 seconds. Or enjoy cold from the fridge.
Serve with vanilla ice cream for an extra treat!
Add a little grated orange or lemon zest to the crumble topping for added flavor.
You can use frozen blueberries, just allow them to sit out for a little while as you prepare the other ingredients.
