Combine blueberries, honey, cornstarch, water and lemon juice in a medium saucepan.
Bring to a low boil over medium-high heat, stirring constantly.
Boil and stir for one minute.
Remove from heat and pour through a strainer, if desired.
Allow to cool before serving.

Store in an airtight container, such as a glass jar, in the fridge for up to one week.Serve as a topping for breakfasts including pancakes, waffles, oatmeal, crepes, and yogurt.Serve as a topping for desserts including pound cake, cheesecake, and ice cream.Handle with care as blueberry sauce will stain easily.
